Baby’s orange custard

This is made with custard powder – no egg yolk. A tiny bit of finely grated orange rind gives a lovely flavour. Wash and dry the orange before grating the rind.

Ingredients:

• 200 ml prepared follow-on formula*
• 1 teaspoon sugar
• ¼ teaspoon finely grated orange rind
• 1 level tablespoon (3 teaspoons) custard powder
• Optional: ¼ teaspoon Vanilla Essence

Method:

Saucepan Method:
Pour 150 ml of formula into a small saucepan. Add sugar and grated orange rind. Whisk custard powder into remaining 50 ml of milk until smooth.
Heat milk and sugar until almost simmering. Using a wooden spoon, stir in custard powder mixture.

Stir constantly until boiling, and then reduce heat to low and cook, stirring all the time, until thickened – about 1 minute.
Remove from heat
Optional: add vanilla.

Microwave Method:
Pour 150 ml of formula into a one litre oven-glass bowl. Add sugar and orange rind.
Whisk custard powder with remaining 50 ml of formula.
Microwave milk and sugar for 1 minute.
Whisk in custard powder mixture.
Microwave for another 2 minutes, whisking well after each minute, until thickened.
Optional: add vanilla, then whisk again.

Both Methods:
Cover with a paper towel until cool enough to serve. Put half into baby’s bowl. Serve promptly.
Put the rest in a small dish, cover and refrigerate promptly. Use within 2 days.
