Orange sweet potato/kumara puree

 

Orange sweet potato/kumara purée

Suitable for 6 months
Makes 1 cup
A little fresh orange juice adds vitamin C and flavour to this delicious purée. A scoopful of formula powder gives a valuable nutrient boost.

Ingredients:

• 1 cup peeled, diced orange sweet potato/kumara
• 1 cup water (for saucepan method)
• 3 to 4 tablespoons water (for microwave method)
• 1 to 2 tablespoons of freshly squeezed orange juice
• Optional: 1 scoop of follow-on formula powder*

Method:

Saucepan Method:
In a small saucepan boil diced kumara with water, covered, for 10 to 15 minutes or until tender. Drain liquid into a bowl.
Using a hand-held blender, purée kumara in the saucepan, adding some cooking liquid if needed to get a moist, soft texture.

Microwave Method:
Placed diced kumara and water in a small oven-glass bowl or casserole. Cover and microwave for 4 minutes.
Let it cool for at least 4 minutes.
Purée kumara with liquid using a hand-held blender.

Both Methods:
Blend in orange juice
Optional: Use a fork to beat in formula powder just before serving.
Serve warm.
