Potato mash

Ingredients:
• 1 small potato, peeled, cut into even-sized chunks
Method:
Saucepan method: Boil potato with water to cover in a covered saucepan until tender. Drain and reserve cooking water.
Microwave method: Cook time for 800 watt oven Microwave in a covered dish with 3 to 4 tablespoons of water, for about 5 minutes. Allow to cool slightly.
Both methods: Mash with a potato masher, then use a fork to beat to a fluffy purée. Beat in some reserved cooking liquid or boiled water to get a moist consistency. Or mix in some breast milk or infant formula so the mixture is semi-solid, not thick or gluey.
