Vegetables with frozen liver or kidney

Ingredients:

• 1 cup peeled, diced carrot
• 1 ½ cups peeled, diced butternut
• 1 to 1 ½ cups water
• A small cube of frozen liver or kidney

Method:

Cook diced vegetables in water until soft. Drain and reserve liquid.
Mash vegetables until smooth, adding cooking liquid to make a soft purée.

Grate a few teaspoons of liver into the hot mashed vegetables. (Discard any ungrated bits).
Stir, then reheat over hot water or in the microwave.
Cool slightly, and then serve.
