Banana couscous

Here is a way to add the goodness of follow-on formula to a baby milk pudding. This makes a nutritious change from yoghurt and custard and is a good way to boost calcium intake.

Ingredients:

• ¾ cup cold water
• A pinch of cinnamon
• A pinch of nutmeg
• ½ teaspoon sugar
• 4 teaspoons (1 tablespoon plus 1 teaspoon) couscous
• 1 sachet follow-on formula powder*
• 1 small ‘bobby’ banana or ½ a banana, peeled

Method:

Put water, spices, sugar and couscous into a small saucepan and bring to the boil. Reduce heat and simmer, stirring frequently, for about 5 minutes until beginning to thicken. Do not let it boil dry.

Remove from heat. Use a fork to whisk in the formula powder. Add sliced banana.

Return to the heat and stir constantly for about 1 minute to mix well and slightly thicken.

Remove from heat and let stand until cool enough for baby. It will thicken a little more on standing.

Alternative using fresh milk: Use ½ cup water. Simmer with spices, sugar and couscous for about 3 minutes, stirring constantly. Add ¼ cup milk and continue cooking for a few more minutes, stirring. Add sliced banana and cook just until lightly thickened. Cool and serve.
