Part-cooked vegetables for finger food

Partly cooked vegetables make good finger foods, and baby can learn to eat them with a yoghurt dip.

Ingredients:

Vegetable sticks

• Carrot, butternut, pumpkin, potato, parsnip, golden kumara – remove skins and cut into wedges or chip shaped sticks (7 cm by 2 cm) then roasted or boiled/steamed to lightly cook
• Yams – scrub with a stiff brush, trim and cut half lengthwise
• Broccoli or cauliflower florets – steam a few small florets for 5 minutes only. Or microwave for 1 to 2 minutes. Rinse quickly with cold water then drain well.

Method:

Steam vegetable sticks for about 10 minutes, or until crisp-tender (not really soft). Stop further cooking by rinsing with cold water then drain.

Put a few part-cooked vegetable sticks on a platter for baby.

Dips: Try a small dish of plain yoghurt or mashed avocado mixed with yoghurt, or peanut butter dip*.
