Basic white sauce and variations

White sauce makes a nutritious base for a variety of baby, toddler and family meals, the simplest being sauce combined with cooked, chopped or mashed vegetables. The milk sauce adds extra calcium, protein and fat to your baby's diet.

Ingredients:
• 2 tablespoons butter
• 2 tablespoons flour
• 1 cup Standard milk or prepared follow-on formula* (or use ½ cup milk plus ½ cup water from boiling vegetables)
Method:
Melt butter in a small saucepan. Stir in flour and cook, stirring constantly with a wooden spoon on a moderate heat for a few minutes.
Gradually stir in the milk or formula (or milk plus vegetable cooking water). Cook, stirring, until the sauce thickens.
Variation: Cheese sauce
• ¼ - ½ cup grated, tasty cheese
Once thickened, remove sauce from heat and stir in grated tasty cheese.
