Benjamin Bunny’s rice

When you have some left over cooked rice make this tasty wee lunch.

Suitable from 12 months
Makes ¾ cup

Ingredients:

• 1 medium sized carrot
• ¾ cup water
• 1 egg
• ¼ cup cooked cold rice
• 2 tablespoons grated cheese

Method:

Bring water to the boil in a small saucepan then add grated carrot.

Cover and boil until carrot is soft – about 10 minutes
Meanwhile lightly beat the egg.

Drain carrot into sieve over a bowl (you will have about ½ cup of cooked carrot)
Off the heat, return carrot to the saucepan and add the rice. Stir in beaten egg. Now, cook gently, stirring constantly on low heat until the egg cooks and the mixture thickens (this doesn’t take too long). Remove from heat and stir in cheese.

Serve as soon as it cools to suit baby.

Please note* Reserve carrot liquid makes a good drink, or add it to soups or white sauce for vegetables.
