Good egg
This is delicious and easy: a little butter and steam cook the egg in minutes. You need a small non-stick frying pan and an improvised lid – a plate will do. An oven-glass pie plate makes a good cover and you can see what’s happening.

• 1 egg
• 1 teaspoon butter or margarine
• 1 to 2 teaspoons of water
Method:
Melt butter in a small, non-stick frying pan, omelette or crepe pan (20 cm diameter), on moderate heat.
When butter begins to gently sizzle (but not brown), carefully break the egg and slide it into the butter. Add the water (use half the egg shell, nearly full) to the pan, alongside the egg. Reduce heat to low and cover the pan with a lid or plate to trap steam.
Cook gently for 2 to 3 minutes. Steam from the water will cook the top of the yolk perfectly.
Serve with toast or bread fingers.
Too prevent eggs cracking when boiling
Have eggs at room temperature, not straight from the fridge. To prevent the egg shell cracking during cooking, first prick a tiny hole in the rounded end of the egg (where the air sac is), using a pin, needle or egg piercer (a little gadget sold in kitchenware shops). Add egg to warm water, not boiling water. On heating, air expanding in the egg can escape through the pin hole, so avoiding the cracked shell and egg white trailing out into the cooking water.
