Jemima Puddle Duck’s dinner (spinach, corn and rice)
Suitable from 12 months Makes about ¾ cup
Ingredients:
• About 2 cups of fresh spinach leaves (coarse stalks removed first) • 2 tablespoons water • ¼ to 1/3 cup canned, cream-style corn • ¼ cup cooked, drained rice • About ¼ cup standard milk or prepared toddler milk*
Method:
Cook washed spinach with 2 tablespoons of water (see cooking spinach, wet leaves method). Finely chop cooked spinach (2 to 3 tablespoons chopped).
Combine creamed corn, spinach and rice in a small saucepan or in a small microwave dish.
Add milk to give a moist mixture. Heat gently in the saucepan, stirring. Or cover and heat in the microwave. Serve warm.
