Mashed potato, egg and greens dinner
Mashed potato makes an excellent basis for kiddie meals and you can make use of leftovers from a family meal. Or cook a potato especially for this.

Ingredients:
• ½ cup mashed potato • 1 small, lightly cooked broccoli floret, chopped • Optional: a little cooked, chopped spinach • 2 tablespoons grated cheese • 1 egg
Method:
Put mashed potato in a small oven-glass dish or casserole. Mix in vegetables and cheese.
Cover, and microwave for 1 minute until hot.
Make a deep hollow in the centre and break in the egg. Prick the egg yolk.
Cover and microwave for 1 to 2 minutes just to barely set the egg. Allow to stand a few minutes then remove lid.
Caution: the potato will be very hot. Make sure this is well cooled before serving to a toddler.
