Mini meat loaf

Mini meat loaf can be cut into small slices which make perfect finger food for a toddler.  Beef is an excellent source of iron and protein for toddlers.
Suitable from 12 months

Ingredients:

• 200 grams minced lean beef topside
• 2 tablespoons wheat germ (optional)
• 2 tablespoons fine or medium oatmeal
• 1 tablespoon tomato paste or tomato sauce
• 50 ml water, standard milk or prepared toddler milk*
• ½ cup peeled, grated apple
• ¼ teaspoon dried oregano
• 1 tablespoon finely chopped parsley
• A sprinkle of pepper

For topping: 1 tablespoon tomato sauce

Method:

Using a fork thoroughly mix together all ingredients except the topping sauce.
Pack meat mixture into a tiny loaf pan - (2 cup capacity, measuring approximately 8 by 14 cm, and 5 cm deep).
Flatten neatly with the fork then spread the remaining tomato sauce over the top.
Bake or Fan-Bake at 160ºC for 35 to 40 minutes.
Serve warm or cold, cut into slices.

When cool, wrap in plastic film or foil and refrigerate. Use within 2 days.
