Potato fast fantastic

This is a sort of no-crust vegetable flan that cooks in the microwave in minutes. It's good warm, but cold leftovers can be cut into wedges for finger food. For littlies leave out the garlic if you wish; it’s good either way.

Ingredients:

• 1 medium sized waxy potato (e.g. nadine)
• 1 pickling onion
• Optional: 1 small clove garlic
• 1 small leaf of silverbeet (*)
• 1 tablespoon butter or margarine
• ⅓ cup grated cheddar cheese
• 1 egg
• ⅓ cup standard milk or prepared Toddler Milk*
• 1 ½ tablespoons (4 ½ teaspoons) self-raising flour
• Optional: a little salt and pepper

Method:

Microwave method:

Cook times given for 800 watt oven
Peel and thinly slice potato. Peel and finely chop onion and garlic. Wash and finely slice silverbeet leaf (or other greens).

Use some of the butter to generously grease a round, microwave-safe dish (about 16 cm diameter). Spread potato slices in an even layer in the dish. Add onion, garlic, and silverbeet. Dot with remaining butter.

Cover the dish with a lid, plate, or plastic wrap. Microwave covered, for 3 to 4 minutes until potato is just cooked. Remove cover, Top vegetables with grated cheese.

Beat together egg, milk, and self-raising flour until smooth. Add a little sprinkling of salt and pepper if you like. Pour egg mixture over vegetables.

Microwave, uncovered for 4 minutes until lightly set.

* Allow to stand at least 8 minutes before serving an adult, or cool to suit a child.

Alternative greens *

Instead of a silverbeet leaf, try Asian greens. Ideal for this is Chinese flat cabbage; a much smaller plant than silver beet, it has little round, dark green leaves on white leaf stalks. Use 5 or 6 of the tiny leaves in place of 1 silverbeet leaf.
