Simple courgette/zucchini fritters
This is a tasty way to add extra vegetables to your toddler’s diet. The fritters are great finger foods. They make a good lunch for parent and toddler to share. Children like them with tomato sauce. Adults may prefer sweet chili sauce.

Ingredients:
• 1 egg • 2 tablespoons flour • 2 tablespoons standard milk or prepared Toddler Milk* • 1 courgette/zucchini • A little bland oil (e.g. canola)
Method:
Put egg, flour and milk in a bowl. Whisk until smooth.
Trim courgette and coarsely grate to give about 1 cup grated. Stir into egg mixture Barely cover the base of a frying pan with oil and heat on moderate.
Drop tablespoons of courgette batter into hot oil. Fry until golden then turn and cook second sides.
Drain on a paper towel and serve warm.
