Steamed fish parcels


Use a piece of any fresh, white fish which is free of all bones. Or use fresh salmon fillet: it flakes well and is moist and juicy. Cook a little more fish than you need for baby’s meal as the rest can be used cold, later, either for baby or for your lunch.

Suitable from 8 months

Ingredients:

• 100 to 150 gram piece boneless fish fillet, e.g. hoki, deep sea dory, monk fish, gurnard, red cod, tarakihi, snapper or salmon

Method:

Make sure there are no bones or scales on the fish. Lay it on a sheet of greased foil. Fold foil securely into a loose parcel to enclose fish.

Place in a perforated steam basket (folding vegetable steamer) in a pan over boiling water.

Cover and steam for about 8 minutes. Time depends on thickness of the fish. Very thin hoki may take less, a thick, chunky piece of monk fish may need 9 to 10 minutes. Do not overcook as this causes fish to become dry.

Immediately remove foil parcel from heat and allow to cool until you can handle it.

Open foil, discard any skin, then flake the fish or cut into cubes.

Serve with vegetables.
