Tara’s cheesy vegetable pie

Ingredients:
• 1 ½ cups grated cheese • 125 g ricotta cheese • 1 courgette/zucchini, grated* • 1 tablespoon chopped fresh parsley • 3 eggs • 1½ cups standard milk or prepared Toddler Milk *
Method:
Preheat oven to 180°C. Mix the cheeses, courgette and parsley. Place in a greased, 23 cm baking dish. Whisk together eggs and milk and add. Bake at 180°C. for 40-45 minutes, or until set and golden brown.

* Other vegetables may be used, e.g. frozen peas or mixed vegetables. Add chopped, cooked bacon too. * This recipe has been tested using Toddler Milk
