Ingredients:

• 1 egg
• 2 teaspoons sugar
• 2 level tablespoons custard powder
• 2 cups (500 ml) standard milk or prepared Toddler Milk*
• ½ teaspoon vanilla essence

Method:

Microwave method:

Cook time for 800 watt oven
In a small bowl beat together egg, sugar, custard powder and ¼ cup of the milk until smooth.

In a deep oven-glass measuring jug or bowl, microwave remaining milk for 2 minutes.

Whisk hot milk into egg mixture, then return all to the jug.

Microwave for 2 minutes, whisking after each minute.

Microwave 30 more seconds, whisk, then leave to cool (covered with a paper towel), for about 10 minutes.   Whisk in vanilla. Serve warm or cold.

Speed up cooling by standing jug in cold water. Then cover closely and refrigerate promptly.

Use within 2 days.
