Tuna puffs

 

Tuna puffs

Suitable from 12 months
Serves 4

Ingredients:

• 1 cup flour
• 1 teaspoon baking powder
• Optional: pepper to taste
• 185 gram can tuna in spring water
• 1 teaspoon finely chopped chives or spring onion greens
• 2 eggs, separated
• ¼ to ½ cup standard milk or prepared toddler milk
• A little oil for cooking

Method:

Sift flour, baking powder and seasonings into a bowl.
Add undrained tuna, chives and egg yolks. Mix well.
Gradually blend in milk (start with a ¼ cup) to make a moist dough.
Beat egg whites until stiff. Fold beaten whites into the tuna mixture.
Heat oil in a frying pan.
Drop tablespoons of batter into hot oil. Cook until golden, turn, and continue until lightly browned and cooked through.
Drain on paper towels and serve.
